Here are three of my favorites--
"In This These Days of Glory" both parts, basically cover the whole time in a series of vignettes.
"The Choices of Mistress Daisy" is a very difficult and disturbing fic about one of Sam's sisters and how she must deal with Lotho. It's quite brilliant.
"A Long Road There and Back" is about Celandine Brandybuck and Moro Burrows, and their encounter with Ruffians.
"The North-Delving Incident"

is three fics from three POVs: Pippin's, an OC's, and Merry's, of a post-Scouring incident where Pippin discovers a pocket of Ruffians hiding out and terrorizing the village of North-delving. The first one "Overlooked" can be read all on its own, but the other two really complement it.
